I can’t find any info on the term LM8UU. Where does it some from? L for linear, 8 for mm and UU for the seals, but that’s as far as I figure. Is there a guide out there?

Something like http://cnc4you.co.uk/resources/LMxxUU%20and%20LMxxLUU.pdf ? It’s a family of part numbers for metric linear motion bearings.
