I pulled up the specs on the board and it said it could handle 12-48 volts. I just didn’t know what the optimal was. I guess I’ll go with 40 volts.

I assume you mean a Gradus M1 board. The board specs are less important than the voltage rating of the stepper drivers. Check the specs on your stepper drivers, this is what will limit your maximum voltage. If they are rated at, say, 40V, set your power supply somewhat less than this rated voltage, as the motors can generate higher voltages on deceleration etc. You need a bit of cushion to allow for this. I would say around 10% lower than the driver rating at least.
