The thrust force for each axis: Fthrust=2pitorque/pitch. For example, if your motor generates 1 N·m (140 oz·in) of torque, with a 5 mm ballscrew you’ll get 6.281/0.005=1256 Newtons of thrust.
Assuming that value is constant when accelerating, if your axis mass is, I don’t know, 12 kg, and your transmission has no friction losses, and that it is not pushing against anything, you’ll have an acceleration of about 10 g (a=F/m).
You’ll need to check the torque-speed curve for your motor in order to find what speed it would reach when generating the correspondig torque.
Try to find a motor/leadscrew combination that has enough torque at the speed you wish your machine to move
