I would like to know if anyone knows there is a way to program a pause between operations.
I would like to have the chance to switch on (manually) the air cooler, between a raster and a cut , and then restart the laser operation.

As a cheat, could you add a very low power and low speed raster or vector operation between your raster and cut operations which would be long enough for you to toggle your air cooler?
Yes - you can add a pause between operations.
Right click on the operation you want to pause after, select “Insert Special Operation(s)…” and then “Add Interrupt”.
It seems to be exactly what I was looking for…
How can I then restart the job? “Resume” button?
You can change the operation properties so that it gives you a specific message:

And when you send the job to the laser you will get a pop-up that looks like this:
